Spiced Mango and Black Bean Tacos with Carrot Cabbage Slaw

This month’s Recipe Redux theme is all about tacos!  And who doesn’t love tacos?!!?  I don’t think I’ve ever met a taco that I didn’t like.  These black bean tacos can be made in less than 30 minutes and are super simple.


The star of these tacos is the spiced mango.  The spice I used is Tajin seasoning.  Have you ever tried it?  I saw Tajin at Aldi this week and decided to grab some.  Our good friends recently introduced us to Tajin seasoning as a great addition to cocktails (think on the rim of margarita glass).   It adds a nice salty lime flavor with just a hint of chili…not really spicy just more flavorful.  Tajin is also a popular fruit seasoning, it works perfectly with tropical fruit like mango, papaya, and pineapple.  

So we have black beans, spiced mango and now lets talk about the slaw.  This cabbage slaw is basically just shredded veggies tossed with a simple vinaigrette and lots of cilantro.  I went with rainbow carrots and cabbage.  It adds a great crunch that I think every taco needs.


Feel free to add your other favorite taco toppings too.  I can hardly eat a taco without avocado so that’s a must for me.  I was dealing with some unripe avocados and saw on Pinterest (of course) that you can wrap an unripe avocado and put it in the oven for ten minutes and it is supposed to ripen.  Well, verdict is that didn’t work.  Has anyone tried that trick?  Have success?  Let me know.


I just stuck with black beans this time but I think this combo would be awesome with fish or chicken tacos too.

  • 1 15 oz can black beans drained
  • 1 lime juiced
  • 1 mango sliced
  • tajin seasoning
  • 8 tortillas
Carrot Cabbage Slaw
  • 1 cup shredded cabbage
  • 1 cup carrots
  • 1 lime juiced
  • 1/2 teaspoon honey
  • 1 Tablespoon olive oil
  • 1/2 teaspoon cumin
  • 1/3 cup cilantro
Additional Toppings
  • avocado
  • sour cream
  • fresh jalapeno
  • salsa
Course Main Dish

Prep Time 10 minutes
Cook Time 10 minutes

Ingredients

  • 1 15 oz can black beans drained
  • 1 lime juiced
  • 1 mango sliced
  • tajin seasoning
  • 8 tortillas
Carrot Cabbage Slaw
  • 1 cup shredded cabbage
  • 1 cup carrots
  • 1 lime juiced
  • 1/2 teaspoon honey
  • 1 Tablespoon olive oil
  • 1/2 teaspoon cumin
  • 1/3 cup cilantro
Additional Toppings
  • avocado
  • sour cream
  • fresh jalapeno
  • salsa



Instructions

  1. Place black beans in small sauce pan, add juice from fresh lime and heat over low heat.
  2. While beans are heating, combine ingredients for slaw in medium size bowl and mix well. Set aside
  3. Slice mango into thin slices. Sprinkle with tajin seasoning.
  4. Heat tortillas until desired doneness. Top each tortilla with a large spoonful of black beans, slice of mango, and top with slaw. Add additional toppings if preferred.

Easy Homemade Chocolate Mint Energy Bites

I have a sweet treat for you today!  I was inspired to make these after trying the new Larabar Bites.   I picked up the chocolate mint flavor before a recent trip and loved them so much I had to recreate them.  These bites are satisfying, a little sweet and actually kind of refreshing because of the mint.


The ingredients are pretty simple and were things I already had in my pantry.  It is the typical energy bite formula…dates + nuts.   When I think about dates, mint does not sound like a good complement but dates are magic!  They are great at taking on whatever flavor you want them to while adding a little sweetness.  I promise!

These bites hold their shape really well and are great for a snack on the run.  The only problem I had was they did not last long around here…it’s hard to just stop at one! 


The mixture on it’s own is a little dry so it might take a little water to help things come together, I used about 2 tablespoons.  If your dates are extra dry, I might recommend soaking them for 10 minutes prior to using or you may need a little more water when processing.   Also watch out for pits in your dates (even if the bag says pitted!) lately I’ve have found a few pits in my pitted dates.

Chocolate Mint Energy Bites

Ingredients

  • 1 cup dried dates pitted
  • 1 cup raw almonds
  • 1/3 cup semi-sweet chocolate chips
  • 1/4 cup cocoa powder
  • 1/2 teaspoon mint extract
  • pinch salt
  • 2-3 Tablespoons water
Course Chocolate, Dessert
Cook Time 15 minutes

Ingredients

  • 1 cup dried dates pitted
  • 1 cup raw almonds
  • 1/3 cup semi-sweet chocolate chips
  • 1/4 cup cocoa powder
  • 1/2 teaspoon mint extract
  • pinch salt
  • 2-3 Tablespoons water



Instructions

  1. Mix all ingredients except water in food processor until mixture becomes very crumbly.
  2. Stream in water until mixture starts to come together. Taste mixture and add additional mint or salt to your taste.
  3. Roll into tablespoon size balls then roll in cocoa powder. Store in the refrigerator.

Finally Found the One- A Natural Deodorant that Actually Works

If you have ever tried to make the switch to natural deodorant you know it can be quite an adventure.  I decided to make the switch awhile ago when I was changing a lot of my other personal care to more natural products.  In the beginning, I probably tried at least 10 or 15 different types including DIY versions without any luck.

This is completely anecdotal but I think it took some time for my body to acclimate to natural deodorants.  In the beginning, things were not good and I contemplated going back to the Clinical Extra-Strength Clog Your Sweat Glands stuff.  Things did eventually get better and I am happy to say I finally found a deodorant that works.  So what is this magical natural deodorant that actually works – it’s Truly’s!


One discovery I made while on this adventure was that I have sensitive armpits.  A lot of the issues I had with other brands was my skin would turn red and kind of rashy…definitely not cute and pretty uncomfortable too.   Baking soda is probably the likely culprit which is a common ingredient in deodorant.  Truly’s does have baking soda but magically it does not irritate my skin at all.

The ingredients in Truly’s could be mistaken for frosting (and that is kind of what it smells like!).  The ingredients just consist of: organic coconut oil, organic powdered sugar, baking soda, and beeswax.  So simple, right?  I actually tried to replicate Truly’s using these same ingredients but I couldn’t get the consistency quite right and it just didn’t work as well.


It looks like Truly’s can be found in a smattering of retail stores throughout the country but I have only found it online. If you buy from their website, you can go whole hog and buy a 5 pack on sale which is what I recently did and now we are probably set on deodorant for the next few years.

Each tub lasts while since you only need a small amount for each application.  In the winter, Truly’s is quite solid but melts right away on skin contact.  Now this deodorant is not going to stop you from sweating because it is not an antiperspirant but it will help you smell a bit better.
