Cooking Fails

Between Pinterest, beautiful food blogs, and social media it is easy to think that delicious and photogenic food is the result everytime someone tries a new recipe.  However, I’m here to tell you that is not the case.  Of course, we don’t always see these food disasters but I know they happen in my kitchen quite often. But I try not to let one fail deter me from trying to make that food or recipe again. I thought I would share a couple of recent misses today.  And these are just the ones I remembered to take pictures of, believe me – there were many more.

This was an attempt to make my own hamburger buns unfortunately these were more like hockey pucks.  Super dense and hard.  Not sure if it was because I used stone ground flour or messed up the rising times but these were a definite fail.

I’ve seen pictures everywhere lately of magical golden turmeric milk.  Unfortunately I decided to not follow a recipe and mine turned out very very bitter and chalky.  I’m thinking maybe because I used turmeric powder and not the actual root.  I’ll will be trying to make this again soon.

This was a beet juice explosion.  Spills happen often along with the random clutter on our kitchen floor.

It’s a sad day when you burn the granola.  Luckily some of it was still salvageable.

I hope this helps anyone that is intimidated by cooking realize that it doesn’t mean you’re a bad cook if something doesn’t turn out.  It happens to everyone now and then.  I think being able to feel comfortable cooking is such a valuable skill to have when trying to eat healthy.  It’s a great way to avoid processed foods or having to depend on restaurant or take out food.  Now go cook something!

Healthy Football Snacks

I’ve never been a huge football fan but I married one so I’ve been working on getting into watching the games a little more.  Since the Lions actually made the playoffs this year, football is becoming a big part of our Sundays!  I’ve found that I do enjoy a little football because it usually either involves good food and a nap or good food and watching the game with friends or family. Either way there is food involved!

I thought I might share some of my favorite football snacks that are a little on the healthier side. Not to say that some of the games haven’t involved chicken wings and nachos but it’s always nice to have a little healthy balance.

A recent delicious combo we had involved our favorite veggie burgers from the Oh She Glows cookbook and vegetarian chili.  The burgers were made into slider size and tasted perfect on pretzel slider rolls.

The chili recipe came from the back of a monster size bag of beans from Costco.

Heirloom Bean Blend Vegetarian Chili

1/4 cup olive oil
2 cups chopped onions
2 medium red bell peppers, diced (any color would work)
6 cloves garlic, minced
2 Tablespoons chili powder
2 teaspoons dried oregano
1-1 1/2 teaspoons ground cumin
1/2 teaspoon cayenne pepper
6 cups cooked heirloom bean blend (I assume you could substitute any cooked bean for this)
1 cup reserved liquid from cooking beans
1 (16 oz) can tomato sauce
For garnish: (Optional)
Chopped cilantro, sour cream, grated cheese and chopped green onions

Heat oil in large heavy-bottomed pot over medium-high heat.  Add onions, bell peppers, and garlic.  Sauté until soft.  Add chili powder, oregano, cumin, and cayenne; stir 2 minutes.  Mix in cooked beans, 1/2 cup reserved bean cooking liquid and tomato sauce.  Bring to a boil, stir, reduce heat and simmer until flavors blend and chili thickens, about 20 to 30 minutes.  Season to taste with salt and pepper.  Garnish as desired with sour cream, green onions, cilantro, and grated cheese.

Other healthy snack ideas:

-Black bean quesadillas
-Energy  balls
-Fruit skewers – Maybe use fruit corresponding with your favorite teams colors
-Fresh guacamole and salsa with whole grain tortilla chips
-Sweet potato fries
-Roasted chickpeas

Healthy Travel Snacks

Packing snacks for a trip is non-negotiable with me.  I always travel with food!  You never know when you are going to be stuck on a plane or in a terminal for who knows how long.  This weekend I’m going on a short trip and the flight is pretty short.  If I was going on a longer trip or flight with multiple connections I would pack A LOT more.

Here’s what I’m taking for this trip.

This trail mix will come in handy on flights and also when in the hotel room.  It has almonds, walnuts, pumpkin seeds, raisins, coconut, and of course just a few dark chocolate bits.

My other go-to travel snacks are Justin’s almond butter individual packs, granola bars, apples, crackers (I’ll put these in a Tupperware or baggy), ginger chews to help with motion sickness, and tea bags.  It is usually pretty easy to find hot water in a food court or you can ask the flight attendant.  I might bring my own thermos if I have room.  I also always bring a refillable water bottle to fill once I’m through security.

I will pack about half of these snacks in my suitcase so I’ll have some food for the trip home.

How To Survive the Workday in a Healthy Way

The majority of Americans now have sedentary jobs.  I believe this is one of the biggest contributors to the rise in obesity.  This infographic from Daily Infographic details just what happens to your body when sitting. Spoiler: it isn’t pretty.

If your job involves using a computer, it is so easy to go hours without having to get up.  Here are my tips for getting through the workday in a healthy way.

1. Force yourself to get up as much as possible.  Go talk to coworkers instead of sending an email.  Go to the restroom that is farthest away.  Take a 5 minute walk down the hall.  Anything that gets you up out of your chair will work.  I try to watch the clock and if 30 minutes have gone by, I make myself get up and at least do a quick stretch which brings me to my next tip.

Other ways to move more: take the stairs and park in the spot farthest from the door.

2. Stretch!  Sitting at a computer can wreak havoc on your neck, back, and shoulders.  Take some time to do some desk stretches.  I often search for a short YouTube video to follow and sometimes my co workers will join in.   We also store a yoga mat in our office so I sometimes will do some yoga moves or a couple of planks.

I also will do a plank while I am waiting for food to heat up in the microwave.  Now I understand if you have a public breakroom that might be a little awkward but the point is to try to squeeze in some activity whenever you can.

3. Sit on an exercise ball.  I have been trying to do this more and more.  I find that I move a lot more when I use it.  I also will use it to stretch by leaning back and stretching out my chest and abs.

4. Bring a water bottle.  Try to set a goal of refilling it a couple of times a day.  I usually have my 32 oz bottle and try to fill it up at least twice so I know I am staying hydrated.

5. Pack healthy snacks. I never ever go to work without food packed.  I always pack a lunch and a few snacks.  It is much easier to give in to office treats or the vending machine if you don’t have your own food packed.  I don’t tend to store food at work since I find I eat it when I’m not really hungry.  I like to pack just enough to get me through one day.

I also find that at work, I’ll reach for snacks when I am hitting that afternoon slump or if I am just flat out bored.  If I pack healthy snacks, at least I know I’m eating something nutritious rather than giving in to the basket of Reese’s Cups that are sitting in our break room right now (I’m not going to give in!).

How to Survive an All-You-Can-Eat Buffet

This weekend we went to a Tigers game and decided to go to the Tiger’s Den buffet before the game.  We got a great seat by the window so we had a view of the field while the players warmed up.

The food situation is an all-you-can-eat buffet.  These type of dining experiences are a real test of will power and restraint.  Everything always looks so tasty!  However, trying everything can lead to major regret or worse – dreaded GI distress!  Here are my tips for getting out of a buffet happy and healthy:

1. First, take a walk through to survey all the options.  If I start grabbing everything in sight my plate fills up fast and usually with a lot of things I would have rather skipped.  For instance, this buffet started with an omelet bar, then a meat station, and then at the end there was fresh fruit, salad, and smoothies.  By knowing that there were more options I opted to skip the omelets and the meats and fill up on the fresh foods.

2. Fill half your plate with fresh fruits or veggies.  This is a nod to the USDA’s MyPlate (the model that replaced the old Food Pyramid).  It’s a pretty simple rule, just divide your plate in half and make sure it is filled with fruit and veggies.

3. If you take something but don’t end up truly enjoying it, leave it on the plate!  Think of your stomach as a limited space where only the most delicious foods can gain access.  Don’t let it get full on those less worthy foods.  For example, I took a piece of banana bread and it was amazing.  So you better believe, I ate the whole piece and enjoyed every bite. Now, I also decided to order a dessert but it wasn’t that good so I took 4 or 5 bites and decided to call it quits.

4. Don’t stress too much.  Most people eat at buffets once in a blue moon.  One indulgent meal isn’t going to ruin everything.  I believe food is fuel but I also believe that food is meant to be enjoyed!

Balance

Tonight we went to the Taste of Kalamazoo. I think most bigger cities hold one of these types of food festivals every summer.  A Taste is a festival where local restaurants offer mini portions of their cuisine. It’s a fun way to try lots of different types of food.  We sampled nachos, tacos, potstickers, sausages, and Mexican popsicles (my favorite).

So needless to say I was not feeling too good later that night. I find the best way to feel better after an indulgence is to hydrate.
Tonight I drank a huge jar of ice water with sliced cucumber for a little flavor and extra hydration.  We also took the dogs for a mile walk. I felt instantly better and more like myself afterwards.  It just takes a few simple steps to get back to healthy living.  It’s all about balancing the not so good with some good.
