What I Ate Wednesday – Work Edition

Happy Wednesday!  Time for another What I Ate Wednesday.  This was a day I was headed to work.  I get up pretty early on those days and usually drink my smoothie during my commute.

Here’s what I packed for my snacks and lunch.  Yes, packing this much food takes a lot of time but it is so worth it.  I don’t work well if I’m hungry and that’s a fact.

The overnight oats were my morning snack.  The oats were mixed with yogurt, sweet cherries, and cinnamon.  The salad and soup were for lunch.  The soup looks a little weird because it was partly frozen.  It was a sweet potato lentil soup that I had made a while back.  (Tip: freeze a few single servings of soup every time you make a some.)  The salad featured something special – black raspberries that we discovered growing in our yard this weekend! It also had a bunch of other random veggies – cucumbers, roasted broccoli, beets, chickpeas plus sunflower seeds and a little goat cheese.

I also packed a hard boiled egg and some trail mix for my afternoon snack.  But tragedy happened, I somehow forgot my trail mix.  I ate it right when I got home along with some more black raspberries.

Dinner was grilled shish kabobs with shrimp, bell pepper, red onion, and pineapple.   I ate mine with lettuce and quinoa and a side of avocado.  I also made a fresh herb mixture of herbs, olive oil, and salt to add a little more flavor.  The grilled pineapple bites were my favorite, is there anything sweeter than grilled fruit??

So that’s all for that day.  Pretty balanced but nothing too out of the ordinary.  I try to eat balanced when at work but I know that it isn’t easy.  The best tip I can give is to prepare foods in bulk for the week.  For instance I made a jar of oats for everyday that I had to work.  I also prechopped salad veggies that will last the week.  It didn’t take long but makes it a lot easier to throw together a relatively healthy lunch.

What I Ate Wednesday- Weekend Edition

Hey Everyone!  Here is another WIAW for you.

Most weekends we make some sort of breakfast besides smoothies.  Although this weekend, I did make a small smoothie for each of us.  Plus we had scrambled eggs with aged gouda and pesto along with a few slices of avocado.  I also made a tea latte since we had some half and half that needed to be used up.  Milk froth really elevates tea to another level, don’t you think?

I had a pre-lunch appetizer of guacamole and tortilla chips. This was devoured in about 2.5 seconds.

The chips filled me up so lunch was just a few zucchini fritters (picked up the zucchini at the Farmers market that morning!) and sliced apricots.  Plus this Cherry Lime La Croix – new favorite flavor alert!  Tastes just like cherry 7-up.

Afternoon snack of gingersnaps with almond butter (leftover from this lemon pie recipe) and a Babybel cheese.

I also got this ginger syrup at the Farmers’ Market.  A tablespoon mixed with club soda makes for a refreshing ginger ale.

We couldn’t go a weekend without a grilled pizza so that is what we had for dinner.  I topped mine with broccoli (also from the farmers’ market), zucchini, and red onions.  Plus a little flatbread with pesto.

I’m so glad Michigan produce is starting to take off.  Our Saturdays are always full of great fresh veggies and other fun market finds.

What I Ate Wednesday

This post is going up a little later than usual but at least it is still Wednesday!

Started off with a smoothie and a side of scrambled eggs for a little more staying power.

My morning snack was Chocolate Ginger granola with raspberries and cashew milk.  I want to make this granola again, it was so good!  This was the day I was photographing the granola and I may have had more than a few handfuls while I was taking pictures.

We were low on lunch foods but I cobbled together this random assortment of roasted sweet potatoes, grapes, Babybel cheese, cucumbers and hummus.  I wasn’t too hungry since I had eaten a substantial breakfast and snack.

Coconut LaCroix is becoming my favorite and I love to drink it with anything almond or peanut butter.  Might sound weird but I love the flavor combo.  This day I had some dried dates with almond butter.

Dinner was a two-parter.  Derek had a work thing later in the night so I made us some nachos to enjoy together before he had to go.  This pic is at the end of us devouring a pan of nachos with leftover steak, peppers, and guacamole.  Tip:  make nachos on a Silpat for easy clean up!

I still was hungry later in the night so I had some quinoa and kale mixture that I got from Costco.  It is frozen and you pop in in the microwave to cook.  It was pretty good but definitely only if you like kale.  The feta cheese was a necessary addition.

Next week I’m going to try to do a weekend or workday to change it up a bit.  Stay tuned!
